Recipe: Golden Carrot Rice Bake

GOLDEN CARROT RICE BAKE

3 cups shredded carrots
3 cups cooked Riceland Extra Long Grain Rice
2 cups shredded cheese, divided use
1/2 cup milk
2 beaten eggs
2 tablespoons chopped onion
1 teaspoon salt
1/4 teaspoon ground black pepper

Combine carrots, rice, 1 1/2 cups of the cheese, milk, and eggs; stir in onion, salt and pepper. Pour mixture into a greased 9 x 13 inch pan. Sprinkle remaining 1/2 cup cheese on top.

Bake in moderate oven (350 degrees F) for 50 to 60 minutes.

Makes 8 servings
