Recipe(tried): Fettuccine with Vodka and Tomato Sauce

Hi All:

I've made this recipe for company with great success. If you have a new bottle of vodka, you will want to cut down on the amount. If the bottle has been sitting on the shelf for some time, you can use the listed amount

Fettuccine with Vodka and Tomato Sauce

2 tablespoons olive oil
1/2 cup chopped onion
1 garlic clove, finely chopped
1 can (28 ounces) plum tomatoes with juices
1/2 cup vodka
1/2 tablespoon crused dried red pepper, or to taste
1/2 cup heavy cream, at room temperature
salt
1 box of fettuccine
2 tablespoons chopped parsley

1. Heat oil in a medium skillet; add onion; saute until tender but not browned, about 5 minutes; stir in garlic; saute 1 minute. Add the tomatoes, vodka and red pepper; simmer, stirring to break up the tomatoes with the side of a spoon, until sauce is reduced and thickened, about 15 minutes. Stir in cream; simmer, stirring until sauce is thickened slightly, about 5 minutes. Season with salt.

2. Meanwhile, cook fettuccine in plenty of boiling salted water until al dente, or firm to the bite. Drain

3. Toss fettuccine with sauce and parsley.
