i've ben doing 'rustic' bread from sponge all year. It is very good but NOT 'light and 'fluffy' like Wonder Bread.
However I have experimented by adding 1/3 cup instant non fat dry milk flakes and 1/2 stick Crisco butter flavored shortening.This does make for a far lighter loaf. I also spray the over 2-3 times toward end of baking cycle. This is all from scratch, no ABM.
