Recipe: Roselyn's Zebra squares (Chocolate Brownies with Butterscotch Fudge Icing)

I have the cook book. Below is the recipe. Hope it's not confusing. I guess Zebra brownies are Chocolate brownies with butterscotch fudge icing. I used to live in Indy and frequented Roselyn's but never tried the zebra brownies. My favorite was the iced cookies. In fact I found your post as I was looking for advice on making the cookies. I wish the Roselyn bakeries had never closed.:( Anyway enjoy your brownies.


CHOCOLATE BROWNIES

4 whole eggs
2 1/4 cup granulated sugar
1 1/4 teaspoon salt
1/2 cup unsweetened cocoa powder
1 1/2 teaspoon vanilla
1/2 teaspoon baking powder
1/2 cup small pecan pieces
1/2 cup light corn syrup
3/4 cup Crisco shortening
2 cups soft-a-silk cake flour
1/4 cup water

Preheat oven to 350 degrees. Grease a 15x10x1 inch baking pan

Add whole eggs, sugar, salt, cocoa, vanilla, baking powder, and pecans into mixing bowl. Mix on medium speed for 3 minutes or until smooth. Scrape bowl.

Add shortening to saucepan and meltdown to liquid. Do not boil.

Add corn syrup to sauce pan and stir. Add to the mixing bowl above and mix on low speed for 1 minute. Mix in flour. Slowly add water and blend well for approximately 1 minute at medium speed. After flour is mixed in scrape down bowl. Pour batter into prepared baking pan.

Bake at 350 degrees for 25 to 35 minutes or until a toothpick inserted in center comes out clean. Cool in pan.

Prepare Butterscotch Fudge Icing and spread on cooled brownies while icing is hot.


BUTTERSCOTCH FUDGE ICING
3/4 cup brown sugar
5 tablespoons granulated sugar
5 teaspoons light corn syrup
3/4 teaspoon salt
6 tablespoons Land-O-Lakes butter
3 1/2 tablespoons water 2 cups powdered sugar
3 teaspoons evaporated milk

Add brown sugar, granulated sugar, light corn syrup, salt, butter, and water into sauce pan. Bring to a boil (229 degrees on a candy thermometer). Take off heat and cool to 110 degrees before adding powdered sugar.

Add powdered sugar to a mixing bowl and then add contents of saucepan. mix on low speed until mixture is smooth. Add evaporated milk in small amounts until desired consistency. Apply to brownies while icing is still hot.

After cooling the frosted brownies, cut into 2x2 inch squares

Makes 3 dozen brownies
