Chris - I HAVE NOT made this bread, I printed it off a forum on a bread site about 2 or 3 years ago as something I might try in the future. Since I make 98% of my bread on the dough/manual cycle and then shape and bake as Italian,French, etc.on the stone in the oven .... I haven't gotten around to this.
I THINK (but over 2 yrs is a long time!) it was supposed to be light. I can't vouch for it at all.
"WONDER BREAD"
1-1/4 cups water (use milk if you want a softer crust)
1 tablespoon butter
1 teaspoon freshly squeezed lemon juice
1/4 cup dry milk powder
1 tablespoon sugar
1 teaspoon salt
1/4 cup dry mashed potato flakes
2 cups all purpose flour
1cup cake or pastry flour
2-1/4 teaspoons active dry yeast
Put ingredients in ABM in order called for in your machine's manual. Set for either Sandwich or Basic Bread; light or medium crust. Check consistency of dough after a short time adding small amount of liquid or flour as/if needed.
To me this sounds like a 2 lb loaf.
You might want to give it a try -- and if so, let us know how it turns out.
