I don't know if this is what you were looking for -- I've made Pear Butter for years. In fact when I can a crate of pears, I cook up the pealings and cores (except for the blossom end) and run them through the Foley Food Mill and make butter from the pulp.

Pear Butter

Cook pears until soft and run through food mill
1 cup pulp
1/2 cup sugar
Cook slowly for approximately 1 1/2 hr. or until thick.
