Recipe: Nectarine Cobbler (microwave)

NECTARINE COBBLER

5 cups nectarines, sliced
1 (4-serving size) pkg cook-and-serve butterscotch pudding mix, divided (not instant)
4 tbsp butter
1/2 cup flour
1/2 cup dark brown sugar, packed
2/3 cup quick oats
1/2 cup chopped pecans
1 tsp cinnamon

Place the nectarines in an 8-inch square glass dish. Sprinkle with 2 Tbsp of the pudding mix; set aside.

Place the butter in a 4-cup glass measure and microwave on high 30 seconds or until melted.

Add the remaining pudding mix, flour, brown sugar, oats, pecans, and cinnamon. Mix until crumbly. Distribute over the nectarines.

Rotating the dish midway through the cooking, microwave on high for 12 minutes, or until bubbly.

Let stand 10 minutes.
