I tried the Hemstough Bakery Half Moon cookie recipe and it is as close to the original taste as I have ever found. I've tried several recipes over the years and have been disappointed many times. I made a few simple alterantions after baking the first batch as follows:
I halved the butter cream frosting recipe amounts as the original recipe posted makes too much. I also increased the cocoa (added 1/4 cup) and milk (to maintain the same consistency)a bit to make the chocolate flavor richer in the cookie. If you can find "DARK COCOA" the original recipe amounts should be fine.
The cookies remains very moist so be hesitant to wrap them before giving them time to "air dry", probably left on a cooling rack overnight would would be sufficient.
I would also recommend using good quality chocolate (available at gourmet stores) for the fudge icing recipe so the flavors are the best possible. Half moon cookies were a childhood treat for me and my siblings (we used to get them at several bakeries and Dandee Donuts) and I have always sought them out when traveling back home to upstate NY. This recipe is definitely authentic and worth a try. Thanks for posting it so we can all enjoy these cookies the way they were intended to taste!
