German Cheesecake:
A very tasty crust and filling.
CRUST:
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/4 cup soft butter
1/2 cup sugar
1 teaspoons lemon flavour
2 eggs
FILLING:
3 eggs yolks,well beaten.
2 pounds cheese.... (1 pound cream cheese, 1 pound ricotta cheese or dry pressed cottage cheese, or a combination of all three cheeses or farmers cottage cheese to make 2 pounds. Rub them through a sieve or put them all in a food processor till smooth.

grated rind of 1 lemon
1/3 cup of potato starch OR 1 packages of Oetker vanilla pudding
1 cup raisins (optional)
3 egg whites, beaten till stiff.
FOR THE CRUST:
Sift flour, baking powder, and sugar, cut butter into the flour, add lemon flavour and whole eggs. Blend all, and pat the crust on the bottom and sides about half way up s 9 inch greased parchment lined or aluminum greased springform pan.
FILLING:
Add the egg yolks with the blended cheese, add sugar, lemon rind, potato starch or pudding powder, and raisins, blend well. Fold in stiffly beaten egg whites.
Pour filling on top of crust. Bake 350 degrees F. for about 90 minutes or until top is light brown. Cool.
