The filling for Helms cream puffs was a special pastry cream. If I had to replicate it, there are some recipes if you search for: "pastry cream".
My dad was a baker in Helms Danish pastry department and in the 1980's he opened a donut shop in Hawthorne, CA. One day close to the holidays, he decided to make a appetizer version of a cream puff. He mixed French donut batter and then dropped it into the fryer using a donut hole plunger. Once the cooled, he filled them with a vanilla "Bavarian Creme". It was as close to Helms as I have ever tasted.
