Recipe(tried): German Potato Salad - Another for gary wi

Salads - Potato, Pasta
German Potato Salad (No Flour)

8 slices bacon, diced
1 large sweet onion, diced
1 teaspoon salt
4 tablespoons water
1/2 cup cider vinegar
6 tablespoons granulated sugar
2 tablespoons fresh parsley, finely chopped
1/4 teaspoon ground black pepper
6 cups cooked cold potatoes, peeled and cubed

In large skillet, saute bacon until crisp. Remove bacon with slotted spoon to paper towels to drain. Drain all but 3 tablespoons bacon drippings from skillet. Saute onion in bacon drippings until almost tender. Add salt, water, vinegar, sugar, parsley and ground black pepper to skillet. Bring to a boil. Add potatoes and heat through. Add drained bacon. Serve warm.
Makes 8 servings.
(This is really better if made the day ahead and reheated.)
