Recipe: Golden Meatball Casserole (using cooked rice and Velveeta, 1970)
Main Dishes - Beef and Other MeatsGOLDEN MEATBALL CASSEROLE
1 lb. ground beef
1/2 cup soft bread crumbs
1 egg
1 teaspoon salt
2 tablespoons margarine
2 cups cooked rice
1 cup sliced carrots
1/2 lb. Velveeta Pasteurized Process Cheese Spread, cubed
1/2 cup chopped green bell pepper
1/2 cup milk
1/4 cup chopped onion
Combine meat, bread crumbs, egg and salt; mix lightly. Shape into 12 medium meatballs; brown in margarine.
Combine meatballs and remaining ingredients in 2-quart casserole.
Cover; bake at 350 degrees F for 30 to 35 minutes.
Makes 4 to 6 servings
