OVERLOADED BAKED SWEET POTATO
"Skinny Rule 17 encourages you to fill up with vegetables any and every time you can. Here's an opportunity to load up and keep yourself full for a long time. If you want more than a cup of veggies with your sweet potato, knock yourself out! A dollop of Greek yogurt nicely mimics sour cream."
1 medium sweet potato (unpeeled)
Olive oil spray
1 cup chopped veggies (spinach, zucchini, broccoli, peppers, tomato)
3+1 or 5+1 large eggs, beaten (see note below*)
2 tablespoons plain 2% fat Greek yogurt
Puncture the sweet potato with a fork four or five times. Place on a microwavable dish and microwave on high power for 5 to 8 minutes, until soft. (Start checking after 5 minutes; microwaves vary.)
Meanwhile, coat a medium skillet with olive oil spray and saute the veggies over medium heat until cooked through, about 5 minutes.
Add the eggs to the veggies and scramble.
Carefully take the sweet potato out of the microwave (it will be very hot) and cut lengthwise. Top the sweet potato with the veggie/egg scramble and top with a dollop of Greek yogurt.
*I suggest women to get 1,200 calories a day, so you're going to prepare My Skinny Scramble using a 3+1 ratio (3 egg whites plus 1 whole egg). Men, you can go with the 5+1 ratio (5 egg whites plus 1 whole egg), because you need 1,500 calories a day.
