Recipe(tried): Greek Country Salad with Dressing

Hi Chris W. Try this recipe. It's the dressing for a greek country salad,
but I use it also for regular Greek Salads.

Greek Salad Dressing
1/3 dark olive oil ( the darker,the better taste)
juice of 1 lemon
1 tsp. dried Oregano
1 TBSP. capers,drained
2 cloves minced garlic
1 tsp. salt
1/4 tsp. black pepper

Put all ingredients into a blender ( or powerful processor)and blend
until smooth and or well combined.
This can be doubled,tripled etc...( I've done this x12!!)
If you have lots of fresh ripe tomatoes, largely chop about 4 ,chop
1 red or vidalia(sweet)onion , 1 can pitted large black olives and
about 1/2-3/4 cup feta cheese crumbled. Combine all this in a large
bowl, pour the above dressing over and toss well.Best if left to marinate
in the refrigerator over night.
