GREEK POTATO SALAD WITH FETA VINAIGRETTE
2 pounds red potatoes, cubed
FOR THE DRESSING:
2 tablespoons red-wine vinegar
1/4 cup olive oil
1 tablespoon Dijon mustard
2 tablespoons chopped fresh oregano
Salt and pepper (to taste)
FOR THE SALAD:
1/2 cup Kalamata olives, halved
1 cucumber, peeled, seeded and diced
1/2 cup chopped roasted red peppers
1 green bell pepper, diced
1/2 cup minced red onion
1 cup crumbled feta cheese
1/4 cup chopped fresh parsley
Steam potatoes until tender, 13 minutes.
Whisk vinegar, olive oil, mustard, oregano, salt and pepper.
While potatoes are warm, toss with dressing. Let cool.
Stir in olives, cucumber, red and green peppers, onion, cheese and parsley.
Makes 16 servings (1/2 cup each)
