SPICED BUTTER COOKIES
1 cup (2 sticks) butter, softened
1 cup granulated sugar
Pinch salt
1 egg, room temperature
1 teaspoon pure vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 cups flour
Cream together butter, sugar, salt, egg, vanilla, cinnamon and nutmeg in a large bowl with an electric mixer until light and fluffy. Gradually mix in flour just until well mixed. Refrigerate for an hour.
Preheat oven to 350 degrees. Shape dough into 1-inch balls and place on ungreased baking sheets. These cookies do not spread a lot.
Bake between 12 and 14 minutes until edges of cookies are lightly browned. Cool on baking sheets for just 1 minute then transfer to wire racks to cool complete. Store airtight.
Makes at least 60 cookies
