Spicy Tomato Salsa

2 large tomatoes, peeled, seeded and finely chopped
1 fresh jalapeno or serrano chili pepper, seeded and inely chopped
1 tablespoon finely chopped cilantro
1/2 small red onion, finely chopped
1 small clove garlic, minced
1 teaspoon fresh lime juice
1/2 teaspoon salt
pinch of pepper

In a bowl combine all ingredients and, using a spoon, mix well. Taste and adjust the seasoning. Store refrigerated in a tightly covered container for up to 5 days.

Makes abouat 2 cups
