CREAM-FILLED CUPCAKES
1 (2-layer-size) strawberry or lemon cake mix*
Ingredients listed on back of box
1 (8 ounce) package cream cheese, softened
1 egg
2 cups powdered sugar
1 (16 ounce) can vanilla, white, or cream cheese frosting
Preheat oven to 350 degrees F. Line cups of muffin pan with cupcake liners and set aside.
Make cake batter as directed on back of box. Fill muffin cups 1/2 full; set aside.
To make the filling, mix cream cheese, egg, and powdered sugar together in a separate bowl. Place a tablespoon of cream cheese filling in center of each cupcake.
Bake 18-23 minutes. Remove cupcakes from pan and cool completely.
Top cooled cupcakes with frosting.
*Any flavor cake mix can be used for this recipe for endless possibilities.
