Recipe: Heavenly Peanut Butter, Chocolate Chip, Oatmeal Cookies (using whole wheat flour)

3 cups old-fashioned oats
1/2 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup firmly packed light brown sugar
1 cup sugar
1 stick (1/2 cup) unsalted butter, softened
1/2 cup natural peanut butter
2 large eggs
1 teaspoon vanilla
2 cups salted peanuts
2 cups semisweet chocolate chips
Preheat oven to 350 degrees F.
In large mixing bowl, combine oats, flour, baking soda, baking powder and salt; set aside.
In separate bowl, beat together sugars, butter and peanut butter with electric stand mixer on medium speed, using paddle attachment, about 5 minutes. Mixture should be light and fluffy. Add eggs and vanilla, scraping down sides of bowl as needed.
Reduce mixer speed to low. Add oat mixture and mix until just combined. Gently stir in peanuts and chocolate chips.
Using small ice cream scoop (1/2 tablespoon), scoop dough and place 2 inches apart on parchment paper lined baking sheet.
Bake 13 to 15 minutes, or until cookies are golden. Remove from oven and cool on baking sheets 5 minutes. Transfer to wire racks and cool completely.
Makes 4 dozen cookies
