This is a salad and dressing that we first had in a restaurant over in St. Augustine, FL and I experimented with the dressing until it's pretty much the same as I remembered.
APPLE WALNUT/SPRING MIX SALAD
WITH GREEN APPLE DRESSING
-Romaine lettuce, cut up how you like it
-Partial package organic spring mix lettuce
-1 small container plain feta cheese (not flavored type)
-Approx. 1 cup of walnuts, chopped coarsely (OR the thin-sliced candied almonds found in small packages)
-1 large Granny Smith Apple, cored, and sliced thinly (don't peel)
-Green Apple Dressing (recipe follows)
If you're making a really big salad all these ingredients can be adjusted upwards
Put lettuces into big flat type salad bowl. Mix them up. Top with apple slices in decorative overlapping pattern. Then crumble the feta cheese over that. Coarsely chop the walnuts (or use the almond slices)and sprinkle over feta and apples. At this point, it can be covered with plastic wrap and kept all day in refrig if needed. DO NOT DRESS salad until just before serving.
GREEN APPLE DRESSING
-1 large can of frozen apple juice concentrate (If you can find Granny Smith frozen concentrate (Publix) that's the best, but any other frozen apple concentrate will do just fine, too)
-Approx. 3 heaping tablespoons of Miracle Whip Salad dressing - I just scoop it out of the jar with a large spoon, I don't measure. (mayo doesn't work as well)
-Poppy seeds - just shake a bunch in - approx a tablespoon?
-Salt and pepper to taste
-1/8 cup rice wine vinegar
In food processor, place frozen apple concentrate, Miracle Whip and Poppy Seeds, vinegar, salt & pepper. pulse until well blended.
This can be made and stored in covered jar in refrig. for at least a week! Just shake it up before pouring it over the salad. I've done it by pouring it over the entire salad in the big bowl just before serving it, and then I've also done individual salad plates and poured it on then, or let each person pour their own on. This makes a large bottle of dressing, and you don't need to use it all - save some in the refrig. for using the rest of the week on other salads.
By making a pretty decorative overlapping of the apple slices on the top, this is a beautiful, dramatic salad to bring to a party and people love it and always ask what that dressing is! It's also good with Red Pear slices.
This dressing is good enough to eat with a spoon just by itself - LOL
