Recipe: Hershey's Red Velvet Cake (or others)

I recently found this easy version in GoodHousekeeping mag.
Easy Red Velvet Cake
Combine 1 box yellow cake mix, 5 eggs, 1/2 cup oil, 1 cup buttermilk,
2 tablespoons cocoa, 2 ounces red food color. Beat 2 minutes and bake as
package directs.
I've used the original cooked buttercream as well as this cream cheese
icing variation:
Cream until smooth: 8 oz. cream cheese, 1/4 cup sugar, 1 tsp.vanilla.
Beat in 8oz. Cool Whip.
This is really light & fluffy and can also be used as a filling for pumpkin rolls,
etc. Enjoy!
