FRUIT COCKTAIL CAKE
1 cup flour
1/2 cup sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
2 eggs
1 (15 oz) can Del Monte Fruit Cocktail
1/2 cup chopped walnuts
1/4 cup packed brown sugar
Whipped cream, ice cream or vanilla yogurt (optional, for serving)
Sift flour with sugar, baking soda and salt. Beat eggs in mixing bowl until thick and lemon colored. Add undrained fruit.
Stir in dry ingredients; mix thoroughly. Pour into greased and floured 9-inch square pan.
Combine nuts and brown sugar. Sprinkle over batter.
Bake at 350 degrees F for 25 to 30 minutes or until tests done.
Serve warm or cold with whipped cream, ice cream or vanilla yogurt, if desired.
Makes 6 to 8 servings
