HOT POTATO SALAD
3 strips bacon
1 small onion, minced
1 small green bell pepper, minced
1 cup mayonnaise
1 tablespoon cider vinegar
2 tablespoons water
1 tablespoon Lea & Perrins Worcestershire Sauce
1/2 teaspoon dry mustard
3 cups cooked sliced potatoes
3 hard cooked eggs, shelled and chopped
1/2 cup chopped celery
1/4 cup chopped dill pickle
Fry bacon until crisp. Remove bacon and crumble.
Add onion and green pepper to the drippings and saute until tender.
Add mayonnaise, vinegar, water, Lea & Perrins and dry mustard. Cook over very low heat for a few minutes.
Add remaining ingredients. Toss well to coat all pieces with dressing. Sprinkle with crumbled bacon.
Serving suggestion:
Serve with grilled knockwurst and crisp pineapple cole slaw.
