You coat after it is frozen. I froze some one year and it was good. I spread the cut pieces onto cookie sheets, froze, then put into bags and put back into the freezer.
FREEZING OKRA
Select young, tender, green pods. Wash thoroughly. Cut
off stems in such a way as not to cut open seed cells.
Water Blanch:
Small pods........................ 3 minutes
Large pods........................ 4 minutes
Cool promptly in cold water and drain well.
Leave whole or slice crosswise.
Pack into containers, leaving 1/2-inch headspace. Seal,
label and freeze.
