There is more information than I can really post here. This is a website for canning the fish. There is another one on smoking the fish.
When you can smoked fish,the fish is just lightly smoked, not fully cooked, then packed and pressure canned for 110 minutes at 11 lb. dial gauge, 10 lb. weighted gauge.

You can print out the information from the websites. Also, your local county extension should have them for sale for a low fee.
