OPRAH'S FAVORITE TURKEY BURGERS

1/4 cup canola oil
3 granny smith apples, peeled, diced
1/2 cup finely chopped celery
1/4 cup thinly sliced scallions
4 pounds ground turkey breast
1/2 cup finely chopped parsley
1/2 cup chutney, pureed, divided use
1 lemon, juice and zest
2 teaspoons chipotle hot sauce
2 tablespoons salt
1 tablespoon ground black pepper
8 hamburger buns (or pita bread halves)
In a saute pan, heat oil. Saute apples, celery and scallions until tender. Cool.
In a large mixing bowl, mix together turkey with apple mixture, parsley, 1/4 cup chutney, lemon and hot sauce. Shape into 8 (8-oz.) burgers. Refrigerate 2 hours.
WHEN READY TO COOK:
Season burgers with salt and pepper. Grill 7 minutes per side or until meat is cooked through. Rest 5 minutes.
Toast buns or pita bread. Serve burgers on the buns or pita bread, garnish with remaining chutney.
Makes 8 servings
