Recipe: Mincemeat Foldovers and Homemade Mincemeat (using apples, raisins, and pecans)

FOR THE DOUGH:
2 cups flour
1/4 cup sugar
1 (8 oz.) pkg. cream cheese
1 cup butter
1 cup prepared mincemeat (for filling)
FOR THE GLAZE:
1 cup powdered sugar
2 tbsp. rum (or 1/2 tsp rum flavoring plus 1 1/2 tsp. water)
2 tsp. light corn syrup
In a large bowl, mix flour and sugar. With pastry blender cut in cream cheese and butter until mixture resembles cornmeal. With hands work dough until it holds together. Divide into 4 balls; wrap each in waxed paper. Refrigerate 2 to 4 hours until dough is firm.
WHEN READY TO BAKE:
Preheat oven to 350 degrees F.
Work with 1/4 of dough at a time; keep remaining refrigerated. On lightly floured surface, roll into 10 inch circle. With 3-inch round cookie cutter, cut into circles. Place 1/2 teaspoon mincemeat in center of each. Moisten edge of dough and fold over mincemeat. Seal edge by pressing with tines of fork dipped in flour. Place on cookie sheet. Repeat with remaining dough, rerolling scraps.
Bake 20-25 minutes, or until golden brown. Remove to wire racks to cool. When cool, drizzle with mixed glaze ingredients (combine ingredients for the glaze until smooth).
TO FREEZE:
Before icing, wrap cooled cookies well, label and date. Freeze up to 3 months.

HOMEMADE MINCEMEAT
Makes 2 cups
2 1/2 cups minced apples
1/2 cup currants
1/4 cup golden raisins
1/4 cup honey
1/4 cup chopped pecans
Grated rind of 1 lemon
Juice and grated rind of 1 orange
1/2 cup apple cider or juice
1/2 tsp. ground nutmeg
1/2 tsp. ground cinnamon
Pinch of ground cloves
Pinch of ground allspice
Pinch of mace
Combine all ingredients in a saucepan. Bring to a boil over medium heat. Lower heat to medium low and simmer for 20 minutes or until thick. Stir occasionally to prevent sticking. Use for pie or cookies.

I hope these cookies and mincemeat recipe are similar to what you're looking for. If the mincemeat isn't the same, you can alter the ingredients (change the currants and golden raisins to 3/4 cup raisins, pecans to a different nut, add spices to taste, etc.).
