Recipe(tried): I do this when browning for Picatta

I used to have the same problem. I made chicken picatta just the other night and tried this: Pound your chicken and BEFORE flouring, place it in a hot skillet that has been spread with olive oil. Sear the chicken a bit on each side and THEN dredge it in the flour and put back in the pan (with the heat turned down a bit of course!)your sauce will be end up being tastier and a bit darker as well..
