Recipe: Curried Tuna Squares (using rice and corn flakes, Kellogg's, 1970's)

4 cups Kellogg's Corn Flakes (or 1 cup Kellogg's Corn Flake Crumbs)
1 (6 oz.) can (1 cup) chunk-style tuna
2 cups cooked rice
1 tablespoon chopped onion
1 tablespoon lemon juice
1/2 teaspoon curry powder
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 eggs, slightly beaten
3/4 cup milk
1 tablespoon regular margarine or butter, melted
If using corn flakes, crush into fine crumbs. Set aside.
Drain and flake tuna; place in mixing bowl. Add rice, onion, lemon juice, seasonings, eggs, milk and 3/4 cup of the crumbs; mix well.
Spread tuna mixture in greased 10x6-inch baking dish. Mix remaining crumbs with melted margarine; sprinkle over tuna mixture.
Bake in moderate oven (350 degrees F) about 20 minutes. Cut into squares and serve with lemon wedges.
Makes 6 servings
