Recipe: Black Dog Mashed Sweet Potatoes with Lime and Chipotle

MASHED SWEET POTATOES WITH LIME AND CHIPOTLE

"Great with grilled pork or rotisserie chicken."

4 large sweet potatoes, about 2 pounds
3 tablespoons butter
1 teaspoon chipotle powder
Juice from 1 lime
1/2 teaspoon salt

Peel the sweet potatoes and cut into 2-inch cubes. Steam over about 2 inches of boiling water until soft, about 15 minutes. This method is preferred to boiling, as steaming the potatoes seems to retain more flavor.

In a small saucepan, melt the butter. Whisk in the chipotle powder, salt and fresh lime juice. Pour over the hot steamed potatoes. Blend with a potato masher until the sweet potato mixture is smooth.

Makes 4 to 6 servings
