The cook scraped off the needles with a very sharp knife, then proceeded to cut
off the skin. Be sure you cut it *completely* off, since there is a poison in
it. The insides are generally cut in strips like string beans and blanched.
They can be tossed in salads, or if cooked a little longer can be served as a
side dish as a vegetable.
