Title: Ice Box Fruitcake
Posted by: Kathy, SC on Saturday September 12th 1998 03:37:29 PM

My Mom, who passed away in 1982, gave me this recipe. I don't know where it came
from. Mom always made this at Christmas and gave each of us a loaf to enjoy. Even
folks who don't like regular fruitcake seem to enjoy this recipe. I know I like
it a LOT better than a baked fruitcake.

Ice Box Fruitcake

1 lb. candied cherries
1 lb. candied pineapple
1 lb. nuts, coarsely chopped
1 7-oz. can coconut
Raisins, to taste
1 can Eagle Brand Sweetened Condensed Milk
1 sm. can evaporated milk
1 lb. Graham Crackers, crushed

Put everything in a BIG bowl, mix thoroughly. You will probably want to mix with
your hands, it is rather sticky. Place into containers (I usually use the small
loaf pans.) and refrigerate. I have kept them in the refrigerator about 3 months,
wrapped tightly.
