POLLO CAMPERO BEANS
For some reason, these beans to me are the best .... I had some the other day .... and have jotted down, what I think is in them .... Again ... I've not made these yet ... actually, going to try this evening.... So here goes:
Red Beans - 20%
Pinto Beans - 80%
White Beans - 5%
Bacon - 5%
Onions - 10%
Green Chillies - 2%
Cilantro - 2%
Garlic - 5%
Tomatoes - 5%
Green Bell Pepper - 2%
Cumin - 1%
Chilli Powder - 2%
Salt & Pepper - 5%
Cayenne Powder - 1%
and when I make it tonight, I plan on adding the following to it ....
2 TBS Chopped Seeded Green Jalapeno
1 TBS Chopped Seeded Red Jalapeno
75% water and 25% chicken broth
I'm pretty sure I saw some white beans in there ... and I'm pretty sure I saw some red beans ... but pinto beans was the primary bean...
I would think:
Wash and clean the beans, and soak over night.
Drain, add back to pot.
Add 75% water and 25% chicken broth mix to cover the beans ... I don't know maybe 6-8 cups total mixture????
I noticed the sausage is very sparse .... so you don't need a whole lot of it ... Maybe 1/2 lb, IF that.... Brown it, and set it aside... make sure you get it pretty fine chopped .... no great big pieces or anything....
I also notice the bacon is NOT crispy .... This is either due to them adding it, uncooked to the pot ... or slightly cooking it just to create some fat in the pot .... Try that ....
Add everything to the pot..... EXCEPT the sausage....
Add to the pot the bacon, and the grease .... Be sensible .... you don't need a whole lot of grease ... maybe 1 tbs AT most.....
Bring to a boil .... Reduce to a simmer ... and cover .... cook it for 4 hours ....
At the 3rd hour ... add in the sausage .... and continue to cook.....
IF you see it getting a little too thick ... add chicken broth to it (maybe 50/50 water and chicken broth) ....
Cook till the beans are completely tender....
