Recipe: Ingredient Substitutions for Passover

INGREDIENT SUBSTITUTIONS FOR PASSOVER

This list of food substitutions will enable you to convert many of your favorite recipes to kosher l'Pesach (kosher for Passover).

INGREDIENT = SUBSTITUTION

3/4 cup bread crumbs = One 12-ounce box soup nuts (mandlen), ground.

1 ounce chocolate = 3 tablespoons cocoa plus 1 tablespoon shortening or use a Passover chocolate bar

cornstarch = potato starch

1 cup confectioners' sugar = 1 cup minus 1/2 tablespoon granulated sugar, pulverized in a blender and sifted together with 1 1/2 teaspoons potato starch

1 cup all-purpose flour for baking = 5/8 cup (3/4 cup minus 2 tablespoons) matzo cake meal or potato starch, or a combination sifted together

1 tablespoon flour as a sauce thickener = 1/2 tablespoon potato starch or I egg yolk

1 cup of matzo meal = Three matzos or 2 cups matzo farfel processed 45 seconds to 1 minute

gelatin = Kosher for Passover gelatin
