Recipe(tried): Lemon Pepper Chicken Salad

One of the best chicken salad recipes you will ever come across. Tasty, tangy, just a little bit of spice yet healthy for you.
2 medium chicken breasts
Lemon Pepper seasoning
3 tablespoons extra virgin olive oil
1/4 to 1/3 cup warm water
3 stalks green onion, including the tops
1 stalk celery
1/2 roasted red bell pepper, skinned
3 tablespoons sweet relish, drained
Miracle Whip Salad Dressing (to taste)
Liberally season both breasts with lemon pepper. Heat oil in skillet over medium heat. Place breasts in skillet cooking until dark brown on both sides. Lower heat to medium-low turn breasts one more time and continue cooking turning occasionaly until cooked fully through.
Once cooked through completely but still moist remove from skillet and then cut into small bite-sized pieces and return to skillet adding about 1/4 to 1/3 cup of warm water and increasing heat to medium-high. Sprinkle with more lemon pepper and continue to cook chicken stirring occasionaly until liquid is reduced almost completely.
Turn off heat. Put pieces in food processor and chop coarsley; empty into 2 quart mixing bowl.
Chop onion, celery and roasted pepper finely in food processor add to chicken mixture along with sweet relish.
Add Miracle Whip till mixture aquires your desired taste and consistency (About 3-5 tablespoons). Fold mixture together and serve.
