Recipe: Vodka Rustica Home Version (Macaroni Grill)

MACARONI GRILL VODKA RUSTICA - HOME VERSION

3 cups penne pasta, pre-cooked
3 tbsp olive oil
1/2 tbsp finely chopped garlic
1 oz prosciutto, chopped
2 boneless, skinless chicken breasts
1/4 cup vodka
3/4 cup prepared marinara sauce
1/3 cup heavy (whipping) cream
1/8 tsp sea salt
1/8 tsp table grind black pepper
1 oz parmesan cheese, finely grated
1/8 tsp chopped chives (garnish prep)
1 sprig fresh basil

You'll want to use a thick pasta, such as Penne, as this is a very hearty sauce. So, step one, cook the penne pasta and set to the side.

Preheat oven broiler.

Slice your chicken breast into thin strips. In hot saute pan add oil and strips of chicken.

Once chicken is cooked add garlic and Prosciutto and saute well.

Remove the pan from the flame and add Vodka. Add marinara sauce and simmer 30 seconds.

Add heavy cream, salt and pepper and simmer 30 seconds.

Heat your cooked penne pasta for 20 seconds by dipping the penne in boiling salted water for 10 seconds. Drain thoroughly.

Add pasta to saute pan and toss until well coated. Transfer into baking dish, placing chicken on top. Sprinkle the Parmesan cheese over pasta covering evenly.

Place baking dish oven and bake for approximately four to six minutes or until golden brown.
