Recipe(tried): Keeping peeled potatoes white - Put a piece of coal in the water.

I have a small piece of coal that I have taken with me during all my moves for the last 40 years. Just peel your potatoes and drop in a small chunk of coal. It's a chemistry type thing that makes them white, I'll have to ask my son again what is in the coal that makes the potatoes white.
