Recipe(tried): Lamingtons

I usually buy day old sponge cakes to use in this recipe as it is a lot less mucking around - you can make any of your favourite white cakes but the sponge is best & they are usually half price. Anyway the cake needs to be stale so it is easy to dip and roll. Cut the cake into 2 - 3 inch squares approx.

Icing

1 1/2 cups of icing sugar
3-4 tablespoons cocoa
boiling water
vanilla

Sift icing sugar & cocoa and add enough boiling water to make a thick runny icing. Dip each cake into icing then roll in coconut. You will have to experiment to the right consistency - not too thick that it has a thick coating on the cake and not too think that you cannot roll in coconut.
