KFC FRIED CHICKEN
(copycat recipe)
1 broiler fryer chicken, cut up
3 cups water
1 tbsp. salt
1 cup flour
2 packets instant chicken broth
2 tsp. fines herbs (find them in your spice selection)
2 tsp. onion powder
2 tsp. seasoned salt
1 tsp. MSG
1/2 tsp. ground black pepper
Shortening (for frying)
1 cup chicken broth
Cover chicken with mixture of 3 cups water and 1 tablespoon salt. Chill in bowl for least 1 hour.
Combine flour, instant chicken broth, herbs, onion powder, seasoned salt, MSG, and pepper in a blender and mix well.
Drain chicken pieces. While still wet, thickly coat chicken with the flour mixture.
Melt enough shortening or salad oil to make 1 inch depth in a large skillet. Heat to 375 degrees F. Fry chicken pieces turning once, 5 minutes. Lift and drain on paper towels.
When pieces are fried, drain fat from skillet. Add one cup chicken broth to skillet, and add chicken broth to skillet, add chicken pieces, and cover skillet. Cook 15 minutes or until fork tender.
