Recipe: Lean and Comforting Mini Meatloaves (using ground turkey and oats)

1 pound extra lean ground turkey
3/4 cup old-fashioned oatmeal, uncooked
1/2 cup shredded carrots
1 small tomato, seeded and finely chopped (about 1/3 cup)
1/4 cup olive oil
2 teaspoons Worcestershire sauce
1 egg
1 small onion, minced
2 cloves garlic, minced
2 tablespoons fresh thyme
1 teaspoon salt
1/2 teaspoon ground pepper
2 tablespoons ketchup
Preheat oven to 350 degrees F. Coat 4 small loaf pans (about 4 1/2 x 2 1/2-inches) with cooking spray.
Gently stir together turkey, oatmeal, carrots and tomato.
In another small bowl, whisk together olive oil, Worcestershire sauce and egg until well mixed. Stir in onion, garlic and thyme, then pour over turkey mixture. Add salt and pepper and, again, gently combine the ingredients so as to not compact the meat.
Divide meat into four parts and in prepared loaf pans. Spread 1/2 tablespoon ketchup on each loaf.
Bake until turkey reaches 170 degrees F and inside is no longer pink, about 40-45 minutes.
