LEBANON COUNTY PEACH CAKE
2 tbsp sugar
2 cups flour
3 tsp baking powder
1/2 tsp salt
1/4 cup shortening
1 egg
1 cup milk
FOR THE TOPPING:
Additional sugar
1/4 tsp ground cinnamon
Fresh peaches, peeled and cut in half
Sift and mix together the dry ingredients (except the topping ingredients). Cut in the shortening.
Add the egg and milk which have been mixed together. Mix thoroughly.
Pour into a well-greased oblong (13x9-inch) baking pan and cover with (pitted) peach halves. Sprinkle with sugar and cinnamon.
Bake at 350 degrees F about 35 minutes.
