Recipe: Appetizer Brunch Tarts (using a muffin pan, Bisquick recipe)

APPETIZER BRUNCH TARTS

1/2 pound bulk pork sausage (or chopped ham)
1 1/2 cups Bisquick buttermilk biscuit baking mix
1/4 cup butter
2 tablespoons boiling water
1/2 cup milk
1 large egg, lightly beaten
2 tablespoons thinly sliced green onion
Salt and freshly ground pepper -to taste
1/2 cup grated Swiss or Cheddar cheese

Preheat oven to 375 degrees F. Generously butter 12 standard size muffin cups.

Cook sausage, breaking it up as it cooks; drain well, set aside.

Combine baking mix and butter; stir in 2 tablespoons boiling water until a soft dough forms.

Press 1 tablespoon dough on bottom and up sides of muffin cups. Divide sausage evenly among cups; set aside.

Combine milk, egg, green onion, salt, and pepper. Spoon about 1 tablespoon egg mixture over sausage in each cup. Sprinkle with cheese.

Bake until edges are golden brown and centers are set, about 25 minutes. (Check at 20 minutes.) Refrigerate leftovers.

Makes 12 tarts
