HOT PRAIRIE FIRE BEAN DIP

1 can refried beans
1/2 lb. (1 cup) butter
1/3 lb. Sharp cheese or Velveeta, grated
2 jalapeno peppers, chopped* (remove seeds and ribs for less heat, if desired)
1 medium onion, grated
1 clove garlic, minced
corn chips (for serving)
Mix all ingredients, adding desired amount of liquid from peppers. Heat in microwave or on stove top until cheese is melted.
Serve with corn chips.
*Note: One (4 oz.) can of chopped green chilies and one (4 oz.) can taco sauce may be substituted for jalapeno peppers.
PRAIRIE FIRE BEAN DIP
(Similar to Don Pablo's)

"This recipe isn't an exact imitation, but it comes close, and at least in my opinion tastes better."
1 tablespoon oil
1/2 cup finely chopped onion
1 (15 ounce) can refried beans
1/2 cup shredded cheddar or Monterey Jack cheese
2 tablespoons plain yogurt
2 chipotle chiles, finely chopped*
1 tablespoon adobo sauce from the chiles*
1/2 teaspoon garlic powder
1/2 teaspoon cumin
Dash salt
chips or soft flour tortillas cut into quarters (for serving)
Heat 1 tablespoon oil in a medium skillet over medium-high heat. Add onions and cook for 5 minutes or until soft but not brown.
Place beans in a large microwave-safe bowl. Microwave on high for 1 1/2 minutes or until slightly warm and spreadable.
Add onions and remaining ingredients to the beans and mix well. Microwave on high for 2 1/2 minutes or until hot. Stir well before serving.
Serve with chips or soft flour tortillas cut into quarters.
*To get closer to the restaurant version, substitute 2 3-ounce cans of mild chopped green chiles for the chipotle chiles and omit the adobo sauce. I prefer chipotles, though.
