Recipe: Leftover Roast Beef Sandwiches with Onion and Horseradish Spread
SandwichesLEFTOVER ROAST BEEF SANDWICHES
1/2 cup sour cream
1 Tbsp. dry onion soup mix
1 Tbsp. prepared horseradish, drained
1/8 tsp. pepper
8 slices sour dough bread
1/2 lb. sliced roast beef
Lettuce leaves
Combine first 4 ingredients; mix well. Spread 1 tablespoon of mixture on each slice of bread. Top four of the slices with sliced roast beef and lettuce leaf; cover with remaining slices of bread.
VARIATION:
A thin slice of homegrown tomato can be added on top of roast beef, if desired.
Makes 4 servings
