Recipe: Doodles Muffuletta and Olive Salad
SandwichesDOODLES MUFFULETTA
1/4 pound ham, thinly sliced
1/4 pound Genoa salami, thinly sliced
4 slices Swiss cheese
1 package provolone cheese, 6 oz, sliced
1 round loaf Italian bread, cut horizontally
1 1/2 cups Doodles Olive Salad (recipe follows)
Preheat oven to 350 degrees F.
Layer first 4 ingredients on bottom half of bread; place bread halves on a baking sheet.
Bake at 350 for 20-30 minutes or until thoroughly heated.
Top cheese with chilled Doodles Olive Salad and remaining bread half; cut sandwich into quarters OR layer ingredients on bottom half of bread, top with remaining bread half, wrap in foil and bake at 350 for 20 minutes (until sandwich is thoroughly heated).
DOODLES OLIVE SALAD
Makes 7 cups
3 jars (10 oz each) pimiento-stuffed olives, drained, chop coarsely
3 stalks celery, chopped
2 carrots, grated
2 cloves garlic, finely chopped
1 (4 oz) jar diced pimiento, drained
3 Tablespoons capers, drained
1/3 cup red wine vinegar
Combine all ingredients; cover and chill. Store remaining salad in refrigerator up to 1 week.
