Recipe: Lemon Bars (Argo Corn Starch recipe)

LEMON BARS



"This super-easy recipe mixes fast and bakes fast. Looks great on a party tray or dessert table."

FOR THE CRUST:
1 cup flour
1/3 cup Argo Corn Starch
1/2 cup powdered sugar (plus additional powdered sugar for topping)
1/2 cup butter or margarine, softened

FOR THE LEMON FILLING:
3/4 cup sugar
2 eggs
1 tablespoon Argo Corn Starch
1/4 teaspoon baking powder
3 tablespoons lemon juice

Preheat oven to 350 degrees F.

TO PREPARE THE CRUST:
Combine all crust ingredients (flour, 1/3 cup corn starch, powdered sugar and butter) in a small bowl until well mixed and crumbly. Press into bottom of 8x8-inch pan.

Bake at 350 degrees F for 15 to 20 minutes or until edges are lightly browned.

TO MAKE THE FILLING:
While crust is baking, combine all filling ingredients in a small mixing bowl. Mix with electric mixer or wire whisk until well blended.

Pour filling over hot crust.

Return to oven and continue baking at 350 degrees F for 18 to 20 minutes or until filling is just set. Cool completely.

Sprinkle with powdered sugar and cut into bars.

Makes 16 bars
