Recipe: Chocolate Mint Snaps

CHOCOLATE MINT SNAPS

4 (1 oz) squares unsweetened chocolate
1 3/4 cup shortening
2 cups sugar
2 eggs
1/3 cup corn syrup
2-1/2 Tbsp. water
2 tsp. peppermint extract
4 cups all purpose flour
2 tsp. baking soda
1/2 tsp. salt
1/4 cup plus 2Tbsp. sugar

Melt chocolate over hot water in double boiler. Remove from heat.

Cream shortening, gradually adding 2 cups of sugar beating until light and fluffy. Add melted chocolate, eggs, corn syrup, water and flavoring.

Combine flour, baking soda, and salt; add to creamed mixture and beat until just well blended. Shape into 1-inch balls and roll in sugar. Place balls on an ungreased cookie sheet.

Bake at 350 degrees F for 10 minutes. Cool on cookie sheet for 5 minutes and remove to wire racks to cool completely.

Makes 10 dozen
