Recipe: Lemon-Rosemary Roasted Pork Loin, Rosemary Beets, Country-Style Cheese Cake
Menus Lemon-Rosemary Roasted Pork Loin
1 boneless pork loin roast, 3 to 3 1/2 pounds
1 tbsp. McCormick dried lemon peel or fresh grated lemon peel
2 teaspoon dried rosemary leaves
1/2 teaspoon dried thyme leaves
1/2 teaspoon salt
1/2 teaspoon coarse ground black pepper
4 cloves of garlic, peeled and finely chopped
Heat oven to 350 degrees. Place pork on a foil-lined shallow roasting or baking pan (for easy clean up). Combine lemon peel, rosemay, thyme, salt, pepper and garlic in a small bowl. Rub mixture on all sides of pork loin. Bake for 1 hour (20 to 25 minutes per pound). Use a quick response meat thermometer, inserted through the center of the roast, to check the internal temperature. Temperature should read 160 degrees.
Remove pork from oven and let stand 10 to 15 minutes before slicing. Slice in 1/4 to 1/2 inch slices. Place on serving platter and drizzle with natural gravy from the pan, if desired. Makes 6-8 servings
Rosemary Beets
2 tbsp. unsalted butter or margarine
1 green onion, chopped
1 clove clove of garlic, peeled and chopped
1/2 teaspoon rosemary leaves, finely chopped
1 can (14 1/2 oz) cut beets: no salt added, drained
1 tbsp. lemon juice
Melt butter or margarine in a large skillet over medium-high heat. Add onion and cook for 3 minutes or until onion is golden brown. Add garlic and rosemary to onions and cook for 1 minute. Add beets and lemon juice to onion mixture and stir to combine. Cook 2 more minutes until beet mixture is heated throughout. Season to taste with cracked black pepper. Makes 4 servings.
Country-Style Cheese Cake
1 package (8 oz) cream cheese, regular, low fat or fat free
1 whole egg, beaten
1/2 cup sour cream, regular, low fat or fat free
1 can (12 oz) sweetened condensed milk
1 graham cracker pie crust
Heat oven to 350 degrees. Combine cream cheese, beaten egg, sour cream and Sweetened Condensed Milk in a large mixing bowl. Blend ingredients for one minute using an electric mixer. Pour mixture into Graham cracker crust. Bake on the center oven rack for 35 minutes (center will jiggle). Remove from oven and cool. Chill before serving. Makes 10 servings.
