LEE TROSKEY'S BUTTER MUFFINS
1 1/2 sticks (3/4 cup) butter, softened
1 1/2 cups sugar
2 eggs
2 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 teaspoon vanilla
Preheat oven to 350 degrees F. Grease 12 muffin pan cups.
Cream together the butter and sugar. Add the eggs and mix well.
In a separate bowl stir together the flour, baking powder, and salt. Add the dry ingredients to the creamed mixture alternately with the milk and vanilla. Pour in to greased muffin tin.
Bake at 350 degrees F for 20 minutes for small muffins or 25 minutes for large muffins.
Makes 1 dozen
