MOM'S CHILI
I haven't tried the chili at Red Robin but from the description it sounds a lot like my mom's (She makes gallons of it every week at work where she's famous for it...it's one of their best sellers). It's actually a very simple recipe and you should be able to tweek it and make it close to what you're looking for.
1 pound ground beef
1 large onion, chopped
1/2 to 1 whole green pepper, seeded and chopped
1 small (6 oz) can tomato paste
1 can (large or small depending on your taste) stewed toomatoes
2 cans (16 oz each) chili beans (she uses Brooks but you can also just use canned kidney beans and add more spices too)
2 tablespoons chili powder
salt and pepper to taste
Brown meat. Add onion and green pepper. After 5 minutes add tomato paste, tomatoes, beans and seasoning. Simmer 1 hour.
